Cá rã đông rửa sạch với muối và dấm để ráo nước. Ướp cá với chút gia vị và hạt tiêu để 15 phút cho ngấm. Đánh tan trứng gà rồi cho từ từ bột chiên giòn vào. Cho thêm ít nước quấy cho sền sệt.

Cho mè trắng ra đĩa. Tiếp theo nhúng cá vào bột đã pha sẵn ở trên.

Sau đó lăn đều cá đã nhúng bột vào mè trắng. Cho vào chảo dầu sôi, chiên vàng rồi vớt ra giấy thấm cho bớt dầu.

Cá giòn rụm, vàng thơm, ăn béo bùi, mùi vị thơm ngon, hấp dẫn. Tiết trời se lạnh ăn cùng cơm nóng rất hợp.
